Description

An irresistible combination of ground chicken, herbs, and a creamy Parmesan sauce, these savory chicken bombs are perfect for any occasion!


Ingredients

  • 500 g (1 lb) ground chicken
  • 1 egg
  • ½ cup breadcrumbs (panko preferred)
  • ½ cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 Tbsp fresh parsley, chopped
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 2 Tbsp butter (for sauce)
  • 2 Tbsp flour (for sauce)
  • 1½ cups milk (or half-and-half for extra richness)
  • ¾ cup Parmesan, grated (for sauce)
  • ½ cup mozzarella, shredded (for sauce)
  • Salt, pepper, and a pinch of nutmeg (for sauce)
  • Mashed potatoes or cauliflower purée (for serving)
  • Fresh thyme or parsley (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine ground chicken, egg, breadcrumbs, Parmesan, garlic, parsley, onion powder, paprika, salt, and pepper. Mix gently until just combined.
  3. Shape the mixture into medium-sized balls, around the size of golf balls, and place them on a parchment-lined baking tray. Bake for 20–25 minutes until golden and fully cooked.
  4. In a saucepan over medium heat, melt the butter; whisk in the flour to create a roux. Cook for about a minute before slowly adding the milk while whisking.
  5. Add the Parmesan, mozzarella, salt, pepper, and a pinch of nutmeg, stirring until the sauce becomes creamy.
  6. Pour the creamy Parmesan sauce over the baked chicken bombs and broil for an additional 3–5 minutes until bubbly.
  7. Serve with mashed potatoes or cauliflower purée, drizzled with extra sauce and garnished with fresh herbs.

Notes

Use Panko breadcrumbs for a crispier texture. Allow chicken bombs to rest before serving for enhanced juiciness.
