- 4 thin chicken cutlets
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Season the chicken cutlets with salt and pepper.
- Dredge the seasoned cutlets in flour, dip in beaten eggs, and coat in a mixture of breadcrumbs and grated Parmesan.
- Heat olive oil in a skillet over medium heat and cook the chicken for about 3–4 minutes on each side until golden and crisp.
- Melt butter in the same skillet, sauté minced garlic until fragrant, then stir in chicken broth, heavy cream, and Parmesan. Let it simmer until thickened.
- Return the chicken to the skillet and spoon the creamy sauce over it. Garnish with fresh parsley or thyme.
- Serve with mashed potatoes, pasta, or roasted vegetables.
Notes
For best results, use freshly grated Parmesan. Ensure chicken cutlets are thin for even cooking.
