Description

A delightful one-pan meal featuring crispy chicken with a savory Parmesan crust, roasted potatoes, and tender green beans.


Ingredients

  • 1 1/2 lb chicken breast (about 34 pieces, approx. 1 inch thick)
  • 2 T olive oil
  • 2 garlic cloves, minced
  • 1/3 c grated parmesan
  • 1/3 c breadcrumbs (Italian or plain)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced (for the potatoes)
  • 2 T olive oil (for the potatoes)
  • 2 T grated parmesan (for the potatoes)
  • Salt and pepper to taste (for the potatoes)
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil (for the green beans)
  • 1 garlic clove, minced (for the green beans)
  • 1 T parmesan (optional, for the green beans)
  • Salt and pepper to taste (for the green beans)

Instructions

  1. Preheat your oven to 425°F and line a sheet pan with parchment paper or spray it with cooking oil.
  2. Toss together all the ingredients for the potatoes in a medium bowl, ensuring they’re well-coated.
  3. Spread the potatoes on one side of the sheet pan and bake for 10-15 minutes.
  4. While the potatoes bake, toss the chicken with olive oil, garlic, parmesan, breadcrumbs, pepper, and salt.
  5. Add the chicken to the sheet pan alongside the potatoes after they have cooked.
  6. Prepare the green beans in another bowl and add them to the sheet pan.
  7. Bake everything for about 25 minutes until the chicken is cooked through.
  8. Let everything cool for a few minutes before serving.

Notes

Ensure all chicken breasts are of similar thickness for even cooking. For crispy potatoes, spread them out on the pan.
