Description

A comforting and hearty soup made with fire-roasted tomatoes, creamy cannellini beans, and a hint of Parmesan, perfect for cold evenings or casual gatherings.


Ingredients

  • 1 sweet onion, diced
  • 4 garlic cloves, minced

  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1 (14 oz) can fire-roasted tomatoes
  • 2 (14 oz) cans cannellini beans, drained and rinsed (about 28 oz total)
  • 4 cups vegetable or chicken stock
  • 1 Parmesan rind
  • 1 cup heavy cream
  • 1/2 cup finely grated Parmesan cheese, plus more for topping
  • 5 oz fresh spinach (or frozen, thawed and squeezed dry)
  • Crushed red pepper, for topping (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, seasoning with a pinch of salt and pepper. Sauté for about 5 minutes, or until the onion is softened and translucent.
  2. Stir in the tomato paste along with the dried basil, oregano, and thyme. Cook for an additional 3–5 minutes, letting the paste darken and the spices release their fragrant aromas.
  3. Add the fire-roasted tomatoes, cannellini beans, stock, and the Parmesan rind. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cover and cook for 20 minutes, stirring occasionally to keep the beans from sticking.
  4. After 20 minutes, uncover the pot and remove the Parmesan rind. Stir in the heavy cream, grated Parmesan, and fresh spinach. Allow the soup to simmer for another 5–10 minutes or until the cheese melts and the spinach is wilted.
  5. Taste the soup and adjust the seasoning with more salt and pepper as needed. Ladle into bowls, topping with extra Parmesan and a sprinkle of crushed red pepper for a hint of spiciness if desired.
