- 4 cups sliced peaches (fresh or canned, drained)
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 cup all-purpose flour
- 1 cup milk
- ½ cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- If you’re using fresh peaches, peel and slice them, then toss with lemon juice, sugar, and cinnamon in a bowl.
- In another bowl, whisk together granulated sugar, brown sugar, flour, baking powder, salt, cinnamon, nutmeg, milk, melted butter, and vanilla extract until just combined; a few lumps are okay.
- Pour the melted butter into an oven-safe dish.
- Carefully pour the batter over the melted butter without stirring; do not mix it in.
- Top the batter with your prepared peach slices, spreading them out evenly.
- Bake for about 45 minutes or until the top is golden brown and bubbling around the edges.
- Allow the cobbler to cool for at least 10 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or on its own. It pairs beautifully with coffee for breakfast or brunch.
