- 4 tablespoons unsalted butter (softened)
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups powdered sugar (sifted)
- 2 cups semi-sweet chocolate chips (or milk chocolate if preferred)
- 1 tablespoon vegetable shortening or coconut oil (for smooth dipping)
Instructions
- In a large mixing bowl, beat together the peanut butter, softened butter, vanilla extract, and salt until smooth and creamy.
- Gradually stir in the powdered sugar, about 1/2 cup at a time, until the mixture forms a thick dough.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Refrigerate the peanut butter balls for at least 30-45 minutes or until firm.
- In a microwave-safe bowl, combine the chocolate chips and shortening. Heat in 20-30 second intervals, stirring each time, until smooth and fully melted.
- Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate and return it to the lined tray.
- Refrigerate again for about 15 minutes until the chocolate coating hardens completely.
Notes
Use high-quality peanut butter for the best taste. Chill the mixture for adequate time to maintain shape during the chocolate dipping process.
