Ingredients

  • 1 cup creamy peanut butter (not natural or oily style)
  • 4 tablespoons unsalted butter (softened)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar (sifted)
  • 2 cups semi-sweet chocolate chips (or milk chocolate if preferred)
  • 1 tablespoon vegetable shortening or coconut oil (for smooth dipping)

Instructions

  1. In a large mixing bowl, beat together the peanut butter, softened butter, vanilla extract, and salt until smooth and creamy.
  2. Gradually stir in the powdered sugar, about 1/2 cup at a time, until the mixture forms a thick dough.
  3. Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Refrigerate the peanut butter balls for at least 30-45 minutes or until firm.
  5. In a microwave-safe bowl, combine the chocolate chips and shortening. Heat in 20-30 second intervals, stirring each time, until smooth and fully melted.
  6. Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate and return it to the lined tray.
  7. Refrigerate again for about 15 minutes until the chocolate coating hardens completely.
