- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 3/4 cup sugar
- 1/2 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter
- 1 cup powdered sugar
- 1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
- In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Beat the eggs and sugar in another bowl until light and fluffy, then stir in the vanilla extract.
- Gently fold the dry ingredients into the egg mixture until combined.
- Pour the batter into the prepared pan and spread it evenly. Bake for about 15 minutes or until a toothpick comes out clean.
- Dust a kitchen towel with powdered sugar. Invert the baked cake onto the towel and roll it up while it’s warm.
- Mix together the peanut butter, powdered sugar, and milk for the filling.
- Once the cake is cool, unroll it, spread the peanut butter filling evenly, then re-roll the cake tightly.
- Chill the rolled cake in the refrigerator for at least an hour before slicing and serving.
Notes
For extra crunch, add crushed peanuts to the filling.
