Description

A delightful dish combining smoky sausage, sweet bell peppers, and tender penne pasta in a savory sauce. Perfect for a family dinner or quick weeknight meal.


Ingredients

  • 8 oz penne pasta
  • 1 lb smoky sausage, sliced
  • 2 bell peppers, sliced (red and yellow)
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until softened, about 3–4 minutes.
  3. Add sliced smoky sausage to the skillet and cook until browned, about 5 minutes.
  4. Toss in the sliced bell peppers and cook for another 3–4 minutes.
  5. Add the can of diced tomatoes (with juice), season with salt and pepper, and let simmer for 5–10 minutes.
  6. Add the cooked penne pasta to the skillet and toss to coat thoroughly. Cook for an additional 2 minutes.
  7. Serve in bowls and garnish with fresh basil or parsley.

Notes

For a spicy kick, add red pepper flakes. Store leftovers in the fridge for up to 3-4 days.
