Description

Ingredients

  • ½ cup unsalted butter (melted)
  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ¾ cup semi-sweet chocolate chips
  • ¼ cup crushed candy canes or peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, combine the melted butter, granulated sugar, and brown sugar until smooth. Add in the eggs, vanilla extract, and peppermint extract.
  4. Slowly add the dry mixture to the wet mixture until just combined, avoiding over-mixing.
  5. If desired, chill the dough for about 30 minutes.
  6. Portion the dough onto the prepared baking sheet using a cookie scoop or tablespoon. Top with chocolate chips and crushed candy canes.
  7. Bake for 12-15 minutes until edges are set and centers remain soft.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a thicker cookie, chill the dough before baking. Adjust the chocolate-to-mint ratio to suit your preference.
