- ½ cup unsalted butter (melted)
- 1 cup granulated sugar
- ½ cup brown sugar (packed)

- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- ¾ cup semi-sweet chocolate chips
- ¼ cup crushed candy canes or peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, combine the melted butter, granulated sugar, and brown sugar until smooth. Add in the eggs, vanilla extract, and peppermint extract.
- Slowly add the dry mixture to the wet mixture until just combined, avoiding over-mixing.
- If desired, chill the dough for about 30 minutes.
- Portion the dough onto the prepared baking sheet using a cookie scoop or tablespoon. Top with chocolate chips and crushed candy canes.
- Bake for 12-15 minutes until edges are set and centers remain soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a thicker cookie, chill the dough before baking. Adjust the chocolate-to-mint ratio to suit your preference.
