- 1/4 tsp salt
- 1 cup (226g) unsalted butter, softened
- 1/2 cup (68g) powdered sugar
- 1/2 tsp peppermint extract
- 2 Tbsp (28g) salted butter, softened
- 2 Tbsp half and half
- 1/4 tsp peppermint extract
- 1 1/2 cups (200g) powdered sugar
- 1/4 cup (42g) finely crushed peppermint bits or candy canes
Instructions
- Whisk together the flour, cornstarch, and salt in a mixing bowl and set aside.
- Cream the unsalted butter and powdered sugar until light and fluffy.
- Add peppermint extract to the butter mixture and mix on low speed, then gradually incorporate the dry ingredients.
- Chill the dough covered in plastic wrap for about an hour.
- Preheat your oven to 350°F while chilling, then scoop, shape, and place the dough on a baking sheet.
- Bake for 10-13 minutes until set and lightly golden on the bottoms.
- Cool on a baking sheet for 10 minutes, then transfer to a wire rack.
- For frosting, cream together salted butter, half and half, peppermint extract, and powdered sugar until fluffy. Frost cooled cookies and sprinkle with crushed peppermint bits.
