Description

A delightful dish featuring juicy chicken, perfectly cooked rice, and a vibrant green sauce made from fresh cilantro and jalapeño.


Ingredients

  • 2 lbs chicken thighs or breasts
  • 2 cups cooked rice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup cilantro leaves
  • 1 jalapeño, seeded and chopped
  • 1/4 cup lime juice
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat olive oil over medium heat. Season the chicken with salt and pepper. Cook for about 6-7 minutes per side until the chicken is golden brown and cooked through. Remove from the pan and set aside.
  2. In a blender, combine minced garlic, cilantro leaves, chopped jalapeño, lime juice, salt, and pepper. Blend until smooth.
  3. Place the cooked chicken over a bed of warm rice and drizzle generous amounts of the green sauce on top. Serve and enjoy!

Notes

For an even deeper flavor, consider marinating the chicken in some of the green sauce for a few hours before cooking. Serve with lime wedges for added freshness.
