  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper, diced
  • 1/4 cup Green Onions, chopped
  • Sesame seeds, for serving
  • Crushed red pepper, optional

Instructions

  1. In a large skillet, heat the olive or sesame oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the chicken breast (cut into bite-sized pieces) to the skillet. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through.
  3. In a bowl, whisk together the soy sauce, pineapple juice, honey (or brown sugar), rice vinegar, and cornstarch mixed with water. Pour this mixture over the cooked chicken in the skillet.
  4. Stir in the pineapple chunks and diced red bell pepper. Let it simmer for about 5 minutes to let the flavors blend and the sauce thicken.
  5. Stir in the cooked rice until everything is well combined. Garnish with chopped green onions, sesame seeds, and crushed red pepper if desired.
