Description
This Thai-style pineapple fried rice combines sweet pineapple chunks, savory jasmine rice, vibrant vegetables, and bold seasonings. Served in a pineapple boat, it’s as stunning to present as it is delicious to eat.
Ingredients
2 cups cooked jasmine rice (preferably day-old)
1 cup fresh pineapple chunks
1/2 cup diced bell peppers
1/4 cup green onions, chopped
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon curry powder
1 tablespoon fish sauce (optional)
2 tablespoons vegetable oil
Salt and pepper to taste
Chopped cilantro or basil for garnish
Instructions
1. Heat oil in a large wok or skillet over medium-high heat.
2. Add garlic and sauté until fragrant, about 30 seconds.
3. Toss in bell peppers and stir-fry for 2 minutes.
4. Add the cooked jasmine rice and stir well to break up clumps.
5. Sprinkle in curry powder, soy sauce, and fish sauce. Mix thoroughly.
6. Fold in pineapple chunks and green onions.
7. Continue stir-frying for 3–5 minutes until everything is heated through.
8. Season with salt and pepper to taste.
9. Garnish with cilantro or basil and serve hot.
10. Optional: Serve in a hollowed pineapple bowl for presentation.
Notes
Use day-old rice for the best fried rice texture.
You can add cooked shrimp, chicken, or tofu for a protein boost.
Adjust the curry powder and soy sauce to your preferred spice and salt levels.
