- 1 cup barley
- 4 cups beef broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes

- Salt and pepper to taste

Instructions
- Pour olive oil into a large pot over medium heat to coat the bottom.
- Add beef cubes and sear until nicely browned on all sides.
- Toss in chopped onions, carrots, and celery; sautรฉ for about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Add barley, beef broth, diced tomatoes, thyme, salt, and pepper; stir well.
- Bring to a boil, then reduce heat and let it simmer for about 1 hour.
