Description

A warm and hearty breakfast casserole filled with savory sausage, fluffy eggs, and cheesy goodness.


Ingredients

  • 1 pound breakfast sausage
  • 6 green onions, chopped
  • 1 red bell pepper, chopped
  • 10 large eggs
  • 1 1/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Tabasco, optional
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups sharp cheddar cheese, shredded
  • 1 (30 ounce) package frozen shredded hash browns, thawed

Instructions

  1. Preheat the oven to 350°F and spray a 9-by-13-inch baking dish with nonstick cooking spray.
  2. Sauté the sausage, red bell pepper, and white parts of the green onions in a skillet over medium-high heat until the sausage is fully cooked, about 6 to 8 minutes.
  3. In a large bowl, whisk together the eggs, heavy cream, Dijon mustard, optional Tabasco, salt, and black pepper. Save half of the green onion tops for garnishing.
  4. Stir in 1 ½ cups of cheddar cheese to the egg mixture, then gently fold in the thawed hash browns and cooled sausage mixture. Pour into the prepared baking dish.
  5. Cover the dish with aluminum foil and bake for approximately 50 minutes.
  6. Remove the foil, sprinkle the remaining 1 ½ cups of cheddar cheese on top, increase oven temperature to 400°F, and bake for an additional 10 to 15 minutes until golden brown.
  7. Let the casserole rest for 10 minutes, then garnish with remaining green onion tops before serving.

Notes

Use a high-quality sausage and ensure hash browns are thawed for best results. Adjust seasoning and ingredients to your preference.
