- 4 Egg Whites
- 200 grams Sugar
- 1 tablespoon Lemon Juice
- 1 tablespoon Potato Starch
- 250 grams Raspberries
- 1 tablespoon Agar Agar or Potato Starch
- 300 ml Heavy Whipping Cream
- 250 grams Mascarpone
- 100 grams Pistachio Paste
- 12 pieces Mini Chocolate Eggs
- 50 grams White Chocolate Shavings
- 100 grams Additional Raspberries
Instructions
- Preheat your oven to 120°C (250°F). In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add sugar, lemon juice, and potato starch while continuing to whisk until a glossy mixture forms.
- Spoon the meringue onto a baking sheet lined with parchment paper and shape them into circular nests. Create a slight dip in the center of each for filling.
- Place the nests in the preheated oven and bake for approximately 60 minutes, or until they are dry to the touch. Once done, turn off the oven and let them cool with the door slightly ajar.
- In another bowl, beat the chilled heavy cream and mascarpone together until soft peaks form. Fold in the pistachio paste gently.
- Once the meringue nests are cool, fill them with the mascarpone and pistachio cream mixture, then top with fresh raspberries and white chocolate shavings.
- Garnish the nests with mini chocolate eggs and additional raspberries for a pop of color and fun.
