A comforting and creamy Polish Potato Soup, also known as Zupa Ziemniaczana, perfect for chilly days with a blend of potatoes, onions, garlic, and a splash of cream.

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Add the diced potatoes and broth, and bring to a boil. Reduce heat to simmer and cook until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup until smooth or leave it chunky if preferred, adjusting consistency to taste.
- Stir in the heavy cream and season with salt and pepper to taste.
- Garnish with fresh dill before serving.
Notes
For a lighter version, substitute half the heavy cream with milk or a non-dairy alternative. Customize with fresh herbs or a dash of spice for added flavor.
