A hearty Potato and Sausage Chowder that combines tender potatoes, savory sausage, and a creamy texture for the perfect comfort food.

- 1 tbsp olive oil
- 400g (6) sausages, any flavor
- 1 onion, chopped
- 2 stalks celery, sliced
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 2 bay leaves
- Salt to taste
- Fresh parsley, chopped, for garnish
- 3 tbsp plain/all-purpose flour
- 1 liter (4 cups) chicken or vegetable stock
- 100g (1/2 cup) wild rice
- 375ml (1 1/2 cups) single/light cream or half and half
- 3 medium potatoes, peeled and cut into chunks
Instructions
- Heat the olive oil in a pot over medium heat. Remove the sausage from its casing and add to the pot, cooking until golden brown. Remove and set aside.
- Add the onion, celery, and carrots to the pot, cooking for 10 minutes. Then, add the garlic and thyme, cooking for another 30 seconds.
- Sprinkle flour over the vegetables, mixing well to form a roux. Cook for a couple of minutes.
- Gradually pour in some chicken stock, stirring to create a smooth mixture. Add the rest of the stock, bay leaves, and wild rice. Simmer for 30 minutes.
- Add potatoes and simmer for another 15 minutes until everything is tender. Stir in the cream and season to taste.
- Serve garnished with parsley.
Notes
Choose your sausage type for varying flavors. For a thicker chowder, increase the flour or simmer longer. Experiment with herbs for added depth.
