Description

A hearty Potato and Sausage Chowder that combines tender potatoes, savory sausage, and a creamy texture for the perfect comfort food.


Ingredients

Scale
  • 1 tbsp olive oil
  • 400g (6) sausages, any flavor
  • 1 onion, chopped
  • 2 stalks celery, sliced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 2 bay leaves
  • Salt to taste
  • Fresh parsley, chopped, for garnish
  • 3 tbsp plain/all-purpose flour
  • 1 liter (4 cups) chicken or vegetable stock
  • 100g (1/2 cup) wild rice
  • 375ml (1 1/2 cups) single/light cream or half and half
  • 3 medium potatoes, peeled and cut into chunks

Instructions

  1. Heat the olive oil in a pot over medium heat. Remove the sausage from its casing and add to the pot, cooking until golden brown. Remove and set aside.
  2. Add the onion, celery, and carrots to the pot, cooking for 10 minutes. Then, add the garlic and thyme, cooking for another 30 seconds.
  3. Sprinkle flour over the vegetables, mixing well to form a roux. Cook for a couple of minutes.
  4. Gradually pour in some chicken stock, stirring to create a smooth mixture. Add the rest of the stock, bay leaves, and wild rice. Simmer for 30 minutes.
  5. Add potatoes and simmer for another 15 minutes until everything is tender. Stir in the cream and season to taste.
  6. Serve garnished with parsley.

Notes

Choose your sausage type for varying flavors. For a thicker chowder, increase the flour or simmer longer. Experiment with herbs for added depth.
