Description

A hearty and satisfying creamy soup combining tender potatoes and savory sausage, perfect for cold nights or family gatherings.


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 pound sausage, casing removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup carrots, diced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons flour

Instructions

  1. Heat a large pot or Dutch oven over medium heat and brown the sausage for 7-10 minutes.
  2. Remove the sausage and keep the rendered fat in the pot.
  3. Add butter, let it melt, and sauté chopped onion for 3-4 minutes.
  4. Add minced garlic and cook for 30 seconds.
  5. Add diced carrots and chopped celery, cooking for 3-4 minutes.
  6. Sprinkle flour over the vegetables and stir for 1-2 minutes.
  7. Slowly pour in chicken broth while stirring to prevent lumps.
  8. Add diced potatoes and season with thyme, salt, black pepper, and paprika.
  9. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes until potatoes are tender.
  10. Stir in the cooked sausage and mix well.
  11. Pour in heavy cream and whole milk, simmer for an additional 5 minutes.
  12. Taste and adjust seasoning if necessary.
  13. Serve hot, garnished with fresh herbs or cheese if desired.

Notes

For a lighter version, substitute half of the heavy cream with low-fat milk. Serve with crusty bread or garlic bread.
