Ingredients

- 1 tablespoon vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 4 cups chicken broth or vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 12 frozen potstickers (dumplings)
- 1 cup sliced mushrooms
- 1 cup baby spinach leaves
- 1 carrot, sliced thinly
- 1 red bell pepper, sliced thinly
- 2 green onions, chopped
- Salt and pepper to taste
- Optional: fresh cilantro, for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and cook for 3-4 minutes until translucent.
- Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
- Pour in the chicken or vegetable broth, soy sauce, and sesame oil. Stir and bring to a gentle boil.
- Once boiling, carefully add the frozen potstickers. Reduce heat to a simmer and cook for 8-10 minutes.
- Incorporate the sliced mushrooms, baby spinach, carrot, and red bell pepper. Simmer for an additional 5 minutes until tender.
- Season with salt and pepper to taste. Ladle into bowls, sprinkle with green onions, and garnish with fresh cilantro if desired.
Notes
For a spicy kick, add some chili oil or sriracha. Feel free to swap in veggies based on what’s in your fridge.
