  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, mix the graham cracker crumbs with 1/4 cup of granulated sugar and melted butter.
  3. Press the crumb mixture into the bottom of the prepared baking pan.
  4. In a large mixing bowl, beat the cream cheese with 1 cup of sugar until smooth and creamy.
  5. Add the pumpkin puree, eggs, vanilla extract, pumpkin pie spice, ground cinnamon, and salt to the cream cheese, and mix until fully combined.
  6. Pour the mixture over the crust and spread evenly.
  7. Bake for 35-40 minutes or until the center is set. Let it cool to room temperature and refrigerate for at least 3 hours.
  8. Once set, slice into bars and serve chilled.
