Description

A visually stunning and deliciously unique cake made with purple yam powder, offering a moist and velvety texture, perfect for celebrations.


Ingredients

  • 2 ¼ cups cake flour
  • ¾ cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon kosher salt
  • 1 package purple yam powder
  • ¼ cup canola oil or vegetable oil
  • 4 ounces unsalted butter, softened
  • ¼ cup vegetable shortening, at room temperature
  • 2 cups granulated sugar
  • 1 tablespoon pure vanilla extract
  • Food coloring – mix equal drops of red and blue, or use ready purple dye
  • 4 large egg whites, at room temperature

Instructions

  1. Preheat your oven to 325°F (165°C). Butter three 8-inch cake pans, line them with parchment paper, and butter the paper too. Dust lightly with flour and tap out the excess.
  2. In a small saucepan, combine 2 cups (480 ml) water with purple yam powder. Stir over very low heat until it thickens into a mash — it should look like creamy mashed potatoes. Once done, remove from heat and whisk in ¼ cup oil. Set aside to cool slightly.
  3. In a large bowl, sift together the cake flour, all-purpose flour, baking powder, baking soda, and salt.
  4. In your mixer, beat the butter and shortening on medium speed for 3–4 minutes until creamy. Add sugar and vanilla, then beat for another 3 minutes until pale and fluffy.
  5. Turn the mixer to low and add the flour mixture in three parts, alternating with the purple yam mixture — begin and end with the flour. Scrape down the sides as you go.
  6. In a small bowl, mix red and blue food coloring to create purple, or use a ready-made purple gel color. Add it to the batter gradually until you reach your desired shade.
  7. In a clean bowl, whisk the egg whites until soft peaks form. Fold these into your batter using a rubber spatula.
  8. Divide the batter evenly among your pans. Bake for 20–30 minutes, rotating halfway through. Cakes are ready when a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in their pans for 20 minutes, then invert them onto a wire rack to cool completely before frosting.

Notes

Make sure to use room temperature ingredients for the best results. Sift flour for a lighter texture and rotate the cakes in the oven for even baking.
