- 1 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a cake pan.
- Cream together the softened butter and sugar until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the ube puree and vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
- Beat the egg whites with cream of tartar until stiff peaks form.
- Fold the egg whites into the batter until no white streaks remain.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
