- 1 pound (450g) Short Pasta (penne, fusilli, orecchiette, or cavatappi)
- 2 tablespoons Extra Virgin Olive Oil
- 4–6 cloves Garlic (thinly sliced)
- 1/2 teaspoon Red Pepper Flakes
- 5 ounces (150g) Fresh Baby Spinach
- 8 ounces (225g) Block Feta Cheese (crumbled)
- 1 large Lemon (zested and juiced)
- 1 1/2 cups Reserved Pasta Water
- 1/2 teaspoon Black Pepper (freshly cracked)
- Salt (to taste)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions.
- Before draining, reserve at least 2 cups of pasta water.
- Heat olive oil in a skillet over medium heat, add garlic and red pepper flakes, and sauté until garlic is fragrant and golden.
- Add spinach to the skillet, tossing it with tongs until wilted.
- Reduce heat to low, add drained pasta, crumbled feta, lemon zest, lemon juice, and black pepper, and mix to combine.
- Pour in about 1 cup of reserved pasta water and stir to create a creamy sauce.
- Adjust consistency with more pasta water if needed; ensure the sauce coats the pasta smoothly.
- Before serving, taste and adjust the seasoning with salt if necessary.
- Serve immediately, garnished with additional feta or olive oil.
