Description

Delicious raspberry truffles combining white chocolate sweetness with raspberry tanginess, perfect for any occasion.


Ingredients

Scale
  • 1 cup white chocolate chips
  • 1/2 cup raspberry puree
  • 1 cup dark chocolate chips (for coating)
  • 1 tablespoon butter (optional, for smooth coating)

Instructions

  1. In a microwave-safe bowl, melt the white chocolate chips in short bursts, stirring in between until smooth.
  2. Stir in the raspberry puree until well combined.
  3. Refrigerate the mixture for about 15 minutes to firm up slightly.
  4. Once chilled, scoop out small portions and roll them into balls.
  5. Place the truffles on a baking sheet and refrigerate until completely set.
  6. Melt the dark chocolate chips with butter, if using, in the microwave or using a double boiler.
  7. Dip each truffle into the melted chocolate and place back on the baking sheet to set.
  8. Allow to cool completely and store in the refrigerator until ready to serve.

Notes

Use good quality white and dark chocolate for the best flavor. Let dipped truffles sit at room temperature to handle before serving.
