Description

Ingredients

  • 2 red snapper fillets
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 teaspoons Creole seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Add the chopped onion, bell pepper, and garlic, cooking until softened, about 5 minutes.
  3. Stir in the diced tomatoes and Creole seasoning, and let simmer for 5 minutes.
  4. Add the heavy cream, stirring until well combined.
  5. Season with salt and pepper to taste.
  6. In another pan, cook the red snapper fillets for about 4-5 minutes on each side or until cooked through.
  7. Serve the snapper topped with the Creole sauce and garnish with fresh parsley.

Notes

Choose fresh snapper for the best flavor. You can use other white fish if snapper isn’t available. Garnish generously with herbs.
