Description

These red velvet cheesecake brownies are rich, creamy, and marbled to perfection. A dessert bar that blends chocolate, vanilla, and tangy cream cheese.


Ingredients

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tbsp red gel food coloring

1/4 cup unsweetened cocoa powder

1/2 cup buttermilk

1 tbsp white vinegar

3/4 cup all-purpose flour

1/4 tsp salt

8 oz cream cheese, softened

1/4 cup granulated sugar (for cheesecake layer)

1 egg yolk

1/2 tsp vanilla extract (for cheesecake layer)


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a large bowl, whisk melted butter and sugar until glossy and combined.

3. Add eggs one at a time, mixing well. Stir in vanilla, red food coloring, and vinegar.

4. Sift in cocoa powder, flour, and salt. Fold gently. Stir in buttermilk until just combined.

5. Pour most of the batter into the prepared pan, reserving about 1/4 cup for swirling.

6. In a separate bowl, beat softened cream cheese, 1/4 cup sugar, egg yolk, and 1/2 tsp vanilla until smooth.

7. Spoon dollops of cheesecake mixture over the red velvet base. Dot reserved batter between.

8. Use a knife or skewer to swirl both layers for a marbled effect.

9. Bake for 30–35 minutes, or until edges are set and center has a slight jiggle.

10. Cool completely in pan, then refrigerate 1 hour before slicing for clean edges.

Notes

Store brownies in an airtight container in the refrigerator for up to 5 days.

Freeze individually wrapped squares for up to 2 months.

Let chilled brownies sit at room temp 10–15 minutes before serving for best flavor.

Pair with whipped cream, berries, or vanilla ice cream for a decadent dessert.
