Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and sugar until light and fluffy, then add egg, vanilla extract, and red food coloring.
  4. Gradually fold in the dry ingredients until just combined.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and place them on the baking sheet.
  6. Using your thumb, make a small indentation in each cookie.
  7. Bake for 10-12 minutes, then cool on a wire rack.
  8. Mix cream cheese, powdered sugar, and vanilla extract until smooth, then fill each thumbprint with the mixture.
