- 2 cups finely crushed chocolate sandwich cookies (cream included)
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 oz cream cheese, softened
- 1 cup peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- Chopped Reese’s Peanut Butter Cups for topping
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine crushed chocolate sandwich cookies, melted butter, and granulated sugar. Press firmly into the bottom of a springform pan to create a crust.
- In another bowl, beat together softened cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
- Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold into the peanut butter mixture.
- Pour the filling over the crust and bake for 50-60 minutes until the center is set but slightly jiggly.
- Cool completely, then refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle with chopped Reese’s Peanut Butter Cups.
Notes
For best results, allow the cheesecake to chill overnight. Use high-quality peanut butter for enhanced flavor.
