Description

A rich and creamy cheesecake infused with peanut butter and topped with crunchy Reese’s Peanut Butter Cups, all resting on a chocolate cookie crust.


Ingredients

  • 2 cups finely crushed chocolate sandwich cookies (cream included)
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • Chopped Reese’s Peanut Butter Cups for topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine crushed chocolate sandwich cookies, melted butter, and granulated sugar. Press firmly into the bottom of a springform pan to create a crust.
  3. In another bowl, beat together softened cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
  4. Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold into the peanut butter mixture.
  5. Pour the filling over the crust and bake for 50-60 minutes until the center is set but slightly jiggly.
  6. Cool completely, then refrigerate for at least 4 hours or overnight.
  7. Before serving, sprinkle with chopped Reese’s Peanut Butter Cups.
