Ingredients

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 cup butter, melted
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  2. Mix the flour, oats, brown sugar, and melted butter in a bowl. Press into the bottom of the baking dish and bake for 15 minutes.
  3. Cook the rhubarb, granulated sugar, and cornstarch in a saucepan over medium heat until thickened. Add the vanilla extract.
  4. Spread the rhubarb mixture over the baked crust and return to the oven for 10 to 15 minutes.
  5. Beat the cream cheese and powdered sugar until smooth, then spread over the cooled rhubarb bars.
  6. Chill the assembled bars in the refrigerator for at least 2 hours before cutting.

Notes

Use fresh rhubarb for best flavor. Allow bars to cool completely before adding cream cheese layer.
