Ingredients

- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 8 oz cream cheese
- 1 cup powdered sugar
- 1 cup butter, melted
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
- Mix the flour, oats, brown sugar, and melted butter in a bowl. Press into the bottom of the baking dish and bake for 15 minutes.
- Cook the rhubarb, granulated sugar, and cornstarch in a saucepan over medium heat until thickened. Add the vanilla extract.
- Spread the rhubarb mixture over the baked crust and return to the oven for 10 to 15 minutes.
- Beat the cream cheese and powdered sugar until smooth, then spread over the cooled rhubarb bars.
- Chill the assembled bars in the refrigerator for at least 2 hours before cutting.
Notes
Use fresh rhubarb for best flavor. Allow bars to cool completely before adding cream cheese layer.
