Description

Ingredients

Scale
  • 1 bulb of garlic
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cups chicken or vegetable broth
  • 2 large potatoes, diced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Sour cream for serving (optional)
  • Crusty bread for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Peel and chop the garlic cloves, then add them to the pot and cook for another minute, stirring frequently.
  4. Add the diced potatoes and broth, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in chopped parsley, and season with salt and pepper.
  8. Serve hot with a dollop of sour cream and crusty bread on the side.

Notes

For a spicier version, consider adding a pinch of red pepper flakes. Adjust potatoes for a thicker or lighter soup as preferred.
