- 1 bulb of garlic
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cups chicken or vegetable broth
- 2 large potatoes, diced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Sour cream for serving (optional)
- Crusty bread for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Peel and chop the garlic cloves, then add them to the pot and cook for another minute, stirring frequently.
- Add the diced potatoes and broth, bringing the mixture to a boil.
- Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in chopped parsley, and season with salt and pepper.
- Serve hot with a dollop of sour cream and crusty bread on the side.
Notes
For a spicier version, consider adding a pinch of red pepper flakes. Adjust potatoes for a thicker or lighter soup as preferred.
