A delightful side dish that combines the fresh flavors of asparagus with lemon, butter, and Parmesan cheese.

- 2 lbs asparagus (about 2 bunches)
- 1 lemon (half juiced, half sliced into rings)
- 4 Tbsp unsalted butter, cut into small pieces
- 1 Tbsp olive oil
- 1 tsp sea salt (or to taste)
- 1/2 tsp freshly ground black pepper (or to taste)
- 1/2 cup shredded Parmesan cheese (or to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the asparagus by rinsing it under cold water and snapping off the tough ends.
- Arrange the asparagus on a large, rimmed baking sheet. Drizzle with olive oil, then sprinkle with salt and black pepper.
- Toss everything until the asparagus is coated evenly.
- Squeeze the juice from half a lemon over the asparagus and arrange the lemon slices on top.
- Distribute the butter pieces along the center of the asparagus.
- Bake for 10 minutes or until the asparagus is tender.
- Switch to broil: sprinkle the Parmesan cheese over the asparagus and broil for 2–3 minutes.
- Serve immediately for the best taste and texture.
Notes
Choose firm, bright green asparagus for the best results. Don’t overcrowd the baking sheet to ensure even roasting.
