Description

A delightful side dish that combines the fresh flavors of asparagus with lemon, butter, and Parmesan cheese.


Ingredients

  • 2 lbs asparagus (about 2 bunches)
  • 1 lemon (half juiced, half sliced into rings)
  • 4 Tbsp unsalted butter, cut into small pieces
  • 1 Tbsp olive oil
  • 1 tsp sea salt (or to taste)
  • 1/2 tsp freshly ground black pepper (or to taste)
  • 1/2 cup shredded Parmesan cheese (or to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the asparagus by rinsing it under cold water and snapping off the tough ends.
  3. Arrange the asparagus on a large, rimmed baking sheet. Drizzle with olive oil, then sprinkle with salt and black pepper.
  4. Toss everything until the asparagus is coated evenly.
  5. Squeeze the juice from half a lemon over the asparagus and arrange the lemon slices on top.
  6. Distribute the butter pieces along the center of the asparagus.
  7. Bake for 10 minutes or until the asparagus is tender.
  8. Switch to broil: sprinkle the Parmesan cheese over the asparagus and broil for 2–3 minutes.
  9. Serve immediately for the best taste and texture.

Notes

Choose firm, bright green asparagus for the best results. Don’t overcrowd the baking sheet to ensure even roasting.
