- 1 head of garlic
- 8 ounces goat cheese, softened
- 1 cup cream cheese, softened
- 1/4 cup sour cream
- 2 tablespoons olive oil, divided
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the top off the head of garlic, wrap in foil, drizzle with 1 tablespoon olive oil, and seal.
- Roast the garlic for 30-35 minutes until soft and golden; let cool slightly.
- In a mixing bowl, combine goat cheese, cream cheese, sour cream, and remaining olive oil; blend until smooth.
- Squeeze roasted garlic into the cheese mixture, add thyme, salt, and pepper; mix well.
- Transfer to a serving dish, garnish with thyme or olive oil, and serve warm with dippers.
Notes
Choose fresh garlic for the best flavor. Store leftovers in an airtight container in the fridge for 3-5 days.
