Ingredients

  • 1 head of garlic
  • 8 ounces goat cheese, softened
  • 1 cup cream cheese, softened
  • 1/4 cup sour cream
  • 2 tablespoons olive oil, divided
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the top off the head of garlic, wrap in foil, drizzle with 1 tablespoon olive oil, and seal.
  3. Roast the garlic for 30-35 minutes until soft and golden; let cool slightly.
  4. In a mixing bowl, combine goat cheese, cream cheese, sour cream, and remaining olive oil; blend until smooth.
  5. Squeeze roasted garlic into the cheese mixture, add thyme, salt, and pepper; mix well.
  6. Transfer to a serving dish, garnish with thyme or olive oil, and serve warm with dippers.
