Ingredients

  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cups vegetable broth
  • 2 cans (15 oz each) white beans, rinsed and drained
  • 2 teaspoons fresh rosemary, chopped
  • Salt and pepper to taste
  • Optional: crusty bread for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in the oven for about 30-40 minutes until soft.
  3. In a large pot, heat olive oil over medium heat and sauté the diced onion until soft and translucent.
  4. Squeeze the roasted garlic into the pot and stir to combine.
  5. Add the vegetable broth and the rinsed white beans, bringing the mixture to a simmer.
  6. Stir in the chopped rosemary, salt, and pepper, adjusting the seasoning to your preference.
  7. For a smoother texture, blend the soup using an immersion blender, or in batches in a traditional blender.
  8. Serve hot, optionally paired with crusty bread for dipping.
