  • 8 oz block feta cheese, crumbled
  • 4 cloves fresh garlic, whole
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 tsp fresh thyme (or oregano)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the halved baby potatoes with olive oil, salt, pepper, paprika, and thyme until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Nestle the crumbled feta and whole garlic cloves among the potatoes.
  4. Roast for 30-40 minutes, tossing halfway through until the potatoes are golden and crispy.
  5. Drizzle any remaining olive oil over the top before serving warm.

Notes
