Ingredients

  • Pasta of choice
  • Fresh tomatoes
  • Garlic
  • Ricotta cheese
  • Olive oil
  • Fresh herbs (e.g., basil, parsley)
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the fresh tomatoes in half and arrange them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast the tomatoes for about 20 minutes until tender and slightly caramelized.
  4. While the tomatoes roast, cook your choice of pasta according to package instructions until al dente.
  5. In a medium skillet, heat olive oil and sauté minced garlic until fragrant.
  6. Once the pasta is cooked, reserve a bit of the pasta water and drain the rest. Combine the drained pasta, roasted tomatoes, garlic, and ricotta in the skillet, mixing well.
  7. Add reserved pasta water as needed to create a creamy sauce.
  8. Stir in your favorite fresh herbs and adjust seasoning to taste.
  9. Serve warm, garnished with extra herbs and drizzle of olive oil.

Notes

For best results, use in-season tomatoes and do not skip the reserved pasta water for a creamy texture.
