Ingredients

- Fresh tomatoes
- Garlic
- Ricotta cheese
- Olive oil
- Fresh herbs (e.g., basil, parsley)

Instructions
- Preheat your oven to 400°F (200°C).
- Cut the fresh tomatoes in half and arrange them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
- Roast the tomatoes for about 20 minutes until tender and slightly caramelized.
- While the tomatoes roast, cook your choice of pasta according to package instructions until al dente.
- In a medium skillet, heat olive oil and sauté minced garlic until fragrant.
- Once the pasta is cooked, reserve a bit of the pasta water and drain the rest. Combine the drained pasta, roasted tomatoes, garlic, and ricotta in the skillet, mixing well.
- Add reserved pasta water as needed to create a creamy sauce.
- Stir in your favorite fresh herbs and adjust seasoning to taste.
- Serve warm, garnished with extra herbs and drizzle of olive oil.
