Ingredients

- 1 cup quinoa
- 2 cups vegetable broth or water
- 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots, broccoli)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the quinoa under cold water.
- Combine the quinoa and vegetable broth in a saucepan; bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Chop the mixed vegetables into bite-sized pieces and place them on a baking sheet.
- Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika.
- Toss everything together to coat evenly.
- Roast the vegetables in the oven for 20-25 minutes.
- Fluff the cooked quinoa with a fork and serve it topped with the roasted vegetables.
Notes
Don’t skip rinsing the quinoa! Experiment with vegetables for variety, and adjust seasoning based on your palate.
