- 2 salmon fillets
- 2 cups fresh spinach
- 1 cup cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add fresh spinach and cook until wilted.
- In a bowl, mix cream, Parmesan cheese, lemon juice, salt, and pepper.
- Place salmon fillets in a baking dish and top with the spinach mixture and the creamy sauce.
- Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through.
- Serve warm.
Notes
For a lighter sauce, substitute half of the cream with broth. Serve with roasted vegetables or light salads.
