Ingredients

Scale
  • 1 cup almond flour
  • 1 cup powdered sugar
  • 3 egg whites
  • 1/2 cup granulated sugar
  • Red food coloring
  • 1/2 cup butter
  • 1 cup powdered sugar (for buttercream)
  • 1 teaspoon vanilla extract
  • Coconut flakes
  • Royal icing

Instructions

  1. Prepare the macaron shells by combining almond flour and powdered sugar in a bowl.
  2. Whip egg whites until foamy, gradually adding granulated sugar until stiff peaks form.
  3. Add red food coloring and gently fold in the dry mixture until combined.
  4. Pipe the mixture into circles on a lined baking sheet.
  5. Let rest until a skin forms, then bake in a preheated oven.
  6. Make buttercream by creaming butter and mixing in powdered sugar and vanilla.
  7. Once shells are cool, spread buttercream on one shell and sandwich with another.
  8. Decorate with royal icing to create Santa’s belt and buckle.
  9. Roll the edges in coconut flakes to finish.

Notes

Make sure your egg whites are at room temperature for better whipping. Use a kitchen scale for accurate measurements.
