- 1 lb sausage (Italian or smoked)
- 4 cups green cabbage, chopped
- 1 cup bell peppers, sliced (mixed colors)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tsp red pepper flakes (optional)
Instructions
- Slice the sausage into bite-sized pieces for even cooking.
- Chop the cabbage into thin strips and dice the bell peppers and onion.
- Heat a large skillet over medium-high heat, add sesame oil, and toss in the sausage. Cook for about 5 minutes until browned.
- Add the diced onions and minced garlic, sauté for about 2 minutes until softened.
- Incorporate the cabbage and bell peppers into the skillet, stir-frying until the vegetables are tender yet still crunchy.
- Pour in the soy sauce and red pepper flakes, mixing well. Cook for another 5 minutes to combine flavors, tasting and adjusting seasoning as needed.
Notes
For a vegetarian version, substitute sausage with plant-based alternatives. Serve with rice or quinoa for a complete meal.
