- 2 tablespoons olive oil
- 1 lb uncooked Italian sausage
- 1 small white onion (thinly sliced)
- 2–3 garlic cloves (minced)
- 1 (8 oz) can tomato puree
- 1 (14 oz) can crushed tomatoes
- 1–3 cups chicken broth (adjust for desired consistency)
- 1 teaspoon dried basil
- 1 cup cream cheese (chopped and softened)
- 1/4 cup parmesan cheese (grated)
- Kosher salt and freshly ground black pepper (to taste)
- Fresh parsley (chopped, for serving)
Instructions
- Heat olive oil in a large pot over medium-high heat. Add sliced onions; cook for about 4-5 minutes until translucent.
- Add uncooked Italian sausage to the pot, breaking it apart as it cooks until browned.
- Stir in minced garlic and cook for an additional minute. Add tomato puree, crushed tomatoes, chicken broth, and dried basil. Bring to a boil, then reduce to a simmer for 10-15 minutes.
- Add softened cream cheese and half of the grated Parmesan cheese. Stir until smooth, adding more chicken broth for desired consistency.
- Season with salt and pepper. Serve in bowls topped with remaining Parmesan and fresh parsley.
Notes
