Description

A delightful soup combining savory Italian sausage and zesty tomatoes enveloped in creamy goodness, perfect for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 lb uncooked Italian sausage
  • 1 small white onion (thinly sliced)
  • 2–3 garlic cloves (minced)
  • 1 (8 oz) can tomato puree
  • 1 (14 oz) can crushed tomatoes
  • 1–3 cups chicken broth (adjust for desired consistency)
  • 1 teaspoon dried basil
  • 1 cup cream cheese (chopped and softened)
  • 1/4 cup parmesan cheese (grated)
  • Kosher salt and freshly ground black pepper (to taste)
  • Fresh parsley (chopped, for serving)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add sliced onions; cook for about 4-5 minutes until translucent.
  2. Add uncooked Italian sausage to the pot, breaking it apart as it cooks until browned.
  3. Stir in minced garlic and cook for an additional minute. Add tomato puree, crushed tomatoes, chicken broth, and dried basil. Bring to a boil, then reduce to a simmer for 10-15 minutes.
  4. Add softened cream cheese and half of the grated Parmesan cheese. Stir until smooth, adding more chicken broth for desired consistency.
  5. Season with salt and pepper. Serve in bowls topped with remaining Parmesan and fresh parsley.

Notes
