Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cream Butter and Sugars: In a bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
- Add Egg Yolk and Syrups: Mix in the egg yolk, corn syrup, vanilla, and maple extract until combined.
- Combine Dry Ingredients: In another bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt; gradually add to the wet ingredients until just combined.
- Shape Cookies: Roll the dough into balls and coat in granulated sugar.
- Bake: Place the balls on a baking sheet and bake for 12 to 15 minutes until edges are golden and centers are chewy.
- Cool: Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
