Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice or pasta
  • 1 cup broccoli florets
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon mixed herbs (thyme, rosemary, parsley)
  • Salt and pepper to taste
  • 1/2 cup milk
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked rice or pasta, broccoli florets, cream of mushroom soup, garlic powder, onion powder, mixed herbs, salt, pepper, and milk. Stir until well mixed.
  3. Pour the mixture into a greased casserole dish. Spread it evenly and top with the shredded cheese, drizzling olive oil on top.
  4. Cover with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  5. Let the casserole cool slightly before serving.

Notes

For added convenience, use leftover rotisserie chicken. Customize the veggies to your liking, and consider adding breadcrumbs for extra crunch.
