  • 1/4 cup Irish Whiskey (Jameson)
  • 4 tablespoons Butter
  • 1 pound Potatoes
  • 1 cup Kale
  • 1 cup Cream
  • 1/2 cup Shallots

Instructions

  1. Marinate the Steaks: In a bowl, combine the Irish whiskey and a pinch of salt and pepper. Add the sirloin steaks, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  2. Prepare the Colcannon: While the steaks are marinating, peel and chop the potatoes. Boil them in salted water until tender, usually about 15-20 minutes. In a separate pot, sauté the shallots and kale in butter until softened. Drain the potatoes and mash them, mixing in the kale and shallots for flavor and texture. Season with salt and pepper to taste.
  3. Cook the Steaks: In a skillet over medium-high heat, melt a tablespoon of butter. Remove the steaks from the marinade and cook them for about 4-5 minutes on each side for medium-rare. Adjust the time based on your preference.
  4. Make the Whiskey Cream Sauce: In the same skillet where you cooked the steaks, add the remaining butter and shallots. Cook for a few minutes until softened. Pour in the cream and the leftover marinade, stirring constantly until the sauce thickens slightly. Season with salt and pepper.
  5. Serve: Place a generous scoop of colcannon on each plate, top it with the steak, and drizzle the whiskey cream sauce over the top. Enjoy!
