- 1 lb ground beef
- 1 cup orzo pasta
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 2 cups beef broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent.
- Add the ground beef to the pot, breaking it apart with a spoon, and cook until browned.
- Stir in the diced bell pepper and zucchini; cook for a few more minutes until softened.
- Add the orzo, beef broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
- Cover and cook for about 10-12 minutes or until the orzo is tender and the liquid is absorbed.
- Remove from heat, garnish with fresh parsley if desired, and serve warm.
Notes
Use fresh vegetables for optimal flavor. Adjust seasonings to taste and consider garnishing with Parmesan cheese.
