Description
A light and refreshing potato salad with warm new potatoes, fragrant dill, and a creamy dressing, perfect for gatherings.
Ingredients
Scale
- 2 pounds small new potatoes
- 1/4 cup finely chopped fresh dill
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and freshly ground black pepper, to taste
- 1/4 cup finely chopped red onion
- 2 tablespoons capers, drained and rinsed
Instructions
- Rinse the small new potatoes to remove any dirt, and cut them into bite-sized pieces, keeping the skins on.
- Place the potatoes in a pot, cover with cold water, add a pinch of salt, and boil. Lower the heat to simmer until fork-tender, about 10-15 minutes.
- In a small bowl, mix together sour cream, mayonnaise, apple cider vinegar, and Dijon mustard until smooth. Season with salt and pepper.
- Drain the potatoes and let them cool slightly. Combine the potatoes with dill, red onion, and capers, then fold in the dressing. Refrigerate for at least 30 minutes.
- Before serving, stir gently and taste to adjust seasoning. Optionally add extra dill for flavor.
Notes
Chill the salad for optimal flavor and consider substituting ingredients based on preference for a vegan or low-carb version.
