Description

A light and refreshing potato salad with warm new potatoes, fragrant dill, and a creamy dressing, perfect for gatherings.


Ingredients

  • 2 pounds small new potatoes
  • 1/4 cup finely chopped fresh dill
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup finely chopped red onion
  • 2 tablespoons capers, drained and rinsed

Instructions

  1. Rinse the small new potatoes to remove any dirt, and cut them into bite-sized pieces, keeping the skins on.
  2. Place the potatoes in a pot, cover with cold water, add a pinch of salt, and boil. Lower the heat to simmer until fork-tender, about 10-15 minutes.
  3. In a small bowl, mix together sour cream, mayonnaise, apple cider vinegar, and Dijon mustard until smooth. Season with salt and pepper.
  4. Drain the potatoes and let them cool slightly. Combine the potatoes with dill, red onion, and capers, then fold in the dressing. Refrigerate for at least 30 minutes.
  5. Before serving, stir gently and taste to adjust seasoning. Optionally add extra dill for flavor.

Notes

Chill the salad for optimal flavor and consider substituting ingredients based on preference for a vegan or low-carb version.
