Ingredients

  • 12 large sea scallops
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1 tablespoon Cajun seasoning
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon paprika
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the scallops dry thoroughly with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the scallops for 2 minutes on each side until golden crust forms. Remove and set aside.
  3. Lower heat and add butter to the skillet; once melted, sauté minced garlic for about 30 seconds.
  4. Stir in Cajun seasoning and paprika, then pour in heavy cream and simmer for 3 to 4 minutes until slightly thickened.
  5. Add Parmesan cheese, stirring until melted. Return scallops to the pan, spoon the sauce over, and warm through for about a minute.
  6. Garnish with chopped parsley and serve hot with the sauce drizzled over.

Notes

For a milder version, reduce the amount of Cajun seasoning. Pair with light salads or garlic mashed potatoes.
