Description

A hearty sheet pan meal featuring juicy chicken breasts, roasted baby potatoes, and vibrant mixed vegetables, all infused with rich garlic butter.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups baby potatoes, halved
  • 2 cups mixed vegetables (like bell peppers, zucchini, and carrots)
  • 1/2 cup unsalted butter
  • 8 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Melt the butter in a small saucepan over low heat and add the minced garlic, dried thyme, dried rosemary, salt, and pepper.
  3. Place the chicken breasts, halved potatoes, and mixed vegetables on a large sheet pan.
  4. Pour the garlic butter mixture over the chicken and veggies, tossing to coat everything evenly.
  5. Spread them out in a single layer on the sheet pan.
  6. Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  7. Garnish with fresh parsley before serving.

Notes

For an even deeper flavor, consider marinating the chicken in the garlic butter mixture for an hour or overnight before cooking.
