Description

A flavorful and wholesome dish that combines tender chicken and vibrant vegetables infused with zesty lemon and aromatic herbs.


Ingredients

  • 1 lb chicken breast (boneless and skinless, cut into 1 ½ inch pieces)
  • 1 tablespoon dried parsley
  • 2 teaspoons Italian seasoning
  • 1 teaspoon minced garlic
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 2 lemons
  • 5 tablespoons olive oil, divided
  • 1 cup baby carrots (cut in halves)
  • 1 1/2 cups baby golden potatoes (halved)
  • 1 cup broccoli florets
  • 1/2 tablespoon minced garlic (for broccoli)

Instructions

  1. Prep the Chicken: Start by patting the chicken breasts dry with a paper towel. Cut them into 1 ½-inch chunks and place them in a large mixing bowl.
  2. Mix the Seasonings: In a small bowl, combine dried parsley, Italian seasoning, onion powder, paprika, seasoned salt, and black pepper.
  3. Marinate the Chicken: Add half of the seasoning mix to the chicken along with 2 tablespoons of olive oil, minced garlic, lemon zest, and lemon juice. Stir well and refrigerate for 30 minutes.
  4. Preheat & Prepare Vegetables: Preheat your oven to 425°F and line a baking sheet with parchment paper. Cut baby carrots and baby potatoes in half.
  5. Roast the Vegetables: Add carrots and potatoes to the baking sheet with 2 tablespoons of olive oil and most of the remaining seasoning mix. Toss and roast for 20 minutes.
  6. Add Broccoli: After 20 minutes, stir the veggies and place broccoli on the baking sheet. Sprinkle minced garlic and drizzle with the last tablespoon of olive oil.
  7. Combine Everything: Remove excess marinade from chicken and spread the chicken across the pan without overlapping.
  8. Final Bake: Roast for another 15-20 minutes or until chicken reaches 165°F. Broil for 1-2 minutes for added color.
  9. Serve & Enjoy: Remove from oven and serve hot.

Notes

Marinating the chicken overnight intensifies the flavor. Don’t crowd the pan for even cooking.
