A quick and healthy shrimp and asparagus stir-fry featuring mushrooms in a savory soy sauce glaze.

- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 8 ounces mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic and ginger, sautéing for 1 minute until fragrant.
- Add shrimp and cook until they turn pink, about 2-3 minutes.
- Add asparagus and mushrooms to the skillet and stir-fry for an additional 4-5 minutes until the vegetables are tender-crisp.
- Pour in soy sauce, and toss everything to coat.
- Season with salt and pepper to taste.
- Serve over cooked rice or noodles.
Notes
For a spicier kick, add red pepper flakes or fresh chili peppers during cooking. Customize with your choice of vegetables.
