Description

A quick and healthy shrimp and asparagus stir-fry featuring mushrooms in a savory soy sauce glaze.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic and ginger, sautéing for 1 minute until fragrant.
  3. Add shrimp and cook until they turn pink, about 2-3 minutes.
  4. Add asparagus and mushrooms to the skillet and stir-fry for an additional 4-5 minutes until the vegetables are tender-crisp.
  5. Pour in soy sauce, and toss everything to coat.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice or noodles.

Notes

For a spicier kick, add red pepper flakes or fresh chili peppers during cooking. Customize with your choice of vegetables.
